Tartar Langoustine

Tartare of prawns citrus scents, melba toast, and caviar Baeri

Ingredients:
• 50 g. fresh prawns cleaned and diced
• 2 gr. citrus zest
• 2 gr. green chilli
• 2 gr. red chilli
• 1 gr. chives
• 2.5 gm. citrus dressing
• 1.5 g. salt
• 0.5 g. white pepper
• Beetroot leaves 3 pcs.
• Red chard 3 pcs.
• Melba toast 3 pcs.
• 9 g. frisee salad
• 3 g. caviar

Step 1 Season the tartar of prawns with chilli's, dressing, salt, pepper, chives, white pepper and citrus zest. Step 2 Dress on a plate and finish with the salads, Melba toast and caviar.
