  1. Season the tartar of prawns with chilli’s, dressing, salt, pepper, chives, white pepper and citrus zest.
  2. Dress on a plate and finish with the salads, Melba toast and caviar.

2 gr. citrus zest
2 gr. green chilli
2 gr. red chilli
1 gr. chives
2.5 gm. citrus dressing
1.5 g. salt
0.5 g. white pepper
Beetroot leaves 3 pcs.
Red chard 3 pcs.
Melba toast 3 pcs.
9 g. frisee salad
3 g. caviar
