Strawberry Rhubarb Consomme

White Chocolate Panna Cotta Rhubarb Consommé, Suzie’s Farm Strawberry Snow

Panna Cotta Ingredients:
• 8 cups heavy cream
• 2 cups milk
• 1 lb. Sugar
• 2 ea. Vanilla beans
• 14 ea Gelatin sheets.
• 12 0z. White chocolate

Step 1 Combine cream, milk, vanilla bean and sugar. Bring to a simmer.
Step 2 Place the gelatin sheet in ice water.
Step 3 Add white chocolate to cream, let rest for 3 minutes and stir until combine.
Step 4 Mix in the gelatin and strain.

Rhubarb Consommé Ingredients:
• 3 pounds of Rhubarb
• 1.5 cup sugar.
• 1 qt Water
• Tarragon to taste

Step 1 • Combine all ingredients and bring to a boil.
• Set aside and let it steep for 5 minutes.
• Strain and chill.

Strawberry Snow Ingredients:
• 1 pound of Fresh Strawberries, compressed
• 2 liters Liquid Nitrogen
