Rhubarb Variations
Ingredients for sugar cristaline:
• 100 g butter
• 130g light brown sugar
• 1 lemon zest
• 200g flour
• 3g baking powder
• 25g egg
• 7g milk
Ingredients for Strawberry Infusion:
• 500g Strawberry
• 1 lemon
• 2 mint
• 1 Orange
• 70g Sugar
• 1 lemongrass
• 4 sheets of gelatin
• 3 apples (Granny)
• 1 bunch of rhubarb (8 sticks)
Clear sugar syrup:
• ½ orange peel
• ½ lemon peel
• 1 star anise
• ½ cinnamon stick
• 2 cloves
• 20 black peppercorns
Ingredients for yogurt strawberry cream:
• 200 ml Crème Fraiche (sour cream)
• 200 ml plain yogurt
• 5 tablespoon strawberry syrup
