Fresh Beet Salad with St.Maure Cheese ‘Brule’

Serves 4

4 Fresh Beets
50 Grams of Roasted Pine Nuts
2 Table Spoons of Chopped Mint
2 Table Spoons of Chopped Cilantro
4 Pitted Prunes
4 Table Spoons of Pomegranate Juice
1 Table Spoon of Balsamic Vinegar
2 Table Spoons of Date Syrup
2 Table Spoons of Olive Oil
Salt & Pepper
St. Maure Cheese
Brown Sugar


Step 1 Peel the beets and cut it into cubes a square centimeter. Step 2 Make a dressing from the pomegranate juice, balsamic vinegar, date syrup, olive oil, salt and pepper. Step 3 Cut the prunes into narrow strips. Step 4 Cut the St. Maure's Cheese into 1/2 CM pieces. Sprinkle brown sugar on the cheese and lightly torch it in a 'brule'
Step 5 Mix the ingredients and top the salad with the cheese.
