Bone Marrow and Herbed Salad

Serves 4

8 pieces of Beef Bone with Marrow
300 Grams of Ribeye Steak
100 Grams of Spinach Leaves – chopped
20 Grams of Pistachios – chopped

Ingredients for Salad
1 Cup of Chopped Parsley
1 Cup of Chopped Mint
1 Cup of Chopped Cilantro
1 Cup of Chopped Celery
50 Grams of Roasted Pine Nuts
1/4 Cub of Fresh Lemon Juice
4 Table Spoons of Olive Oil


Step 1 Chop the Ribeye and spoon out the marrow from the bone. Step 2 Cook the marrow with spinach, salt and pepper Step 3 Fill the bones with the mixture and cover the top of the bone with crushed pistachios.
Bake for 6 Minutes
Step 4 Toss all the ingredients for the salad and serve the bones alongside.
