Honey Ice Cream













(makes one liter)

• 250 grams of honey
• 8 egg yolks
• 50 centiliters of whipping cream
• 3 tbs pine nuts

Step 1 Caramelize the honey until it darkens. Toast the pine nuts and crush them. Blend egg yolks and cream, add
the honey and pine nuts, and slowly cook the mixture until it starts to stick to the spoon. Put it in the ice
cream maker.
Note Note from the Chef: 'If you’re lucky enough to have an acacia tree in bloom nearby, pick the flowers, dip them
in a light batter and deep-fry for one minute. Bon appétit!'
